Quick Miso Ramen Noodle Soup

I love a proper Japanese ramen soup but don't generally have time to make them (a proper ramen takes around 8 hours). I found a version of this recipe on a blog and adapted it a bit to ingredients I could readily find at my local Tesco Metro.

Prepare all ingredients including boiling and peeling your egg, shredding your pork (I use two forks for this) and chopping all other ingredients. Its also best to get the water on to boil in a large pot for your noodles at this stage too. Like a lot of Japanese cooking everything comes together quickly at the end so its best to be prepared.

Heat sesame oil in a medium sized saucepan over a medium heat. Add the garlic, ginger and shallot and cook gently until soft.

Add the meat and increase the heat to medium/high. Fry until it has some added colour and is warmed through and then stir through the chilli paste.

To this mixture add the boiling water (4 cups), miso, sake (or other rice wine if you don't have sake), sugar, sesame seeds and salt. Stir to combine and then reduce the heat to a gentle simmer. Once your mixture is simmering reduce the heat to low - just hot enough to keep it warm.

Add your noodles to the large pot of boiling water you prepared earlier and cook your noodles as per the instructions on the packet.

Once your noodles are cooked drain them and rinse with cold water before dividing evenly between two large soup bowls (use proper ramen bowls if you have them). Pour the warm soup mixture over the top of the noodles making sure both bowls get an even amount of the pork.

Garnish each bowl with half a hard boiled egg, some corn, bean spouts and spring onions and you're read to eat. You can also add Japanese pickled vegetables and seaweed if you have them to make it more authentic.

It's worth noting that if you don't have any leftover roast pork you can just as easily use pork mince or chopped pork belly. Just fry it for longer until browned.
