Roast Imperator Carrots with Cherry Tomatoes recipe

This is a wonderfully lazy way to create an interesting side dish that uses very little oil but has a great deal of flavor.

Preheat the oven to Gas 6 (180C )

Chop the very top of the carrot off (this step is optional)

Tip the olive oil into one hand then use it to coat all the carrots and tomatoes before placing them in the tray. This step ensures all of the ingredients are fully coated while using as little oil as possible

Season the tomatoes with Oregano and everything with salt and pepper (optional)

This is a fantastic side dish which works well with all meats and fish. The real trick is not to eat the carrots raw as they are quite delicious.

  • 1 Tsp Tesco Olive Oil
  • 20 Tescos Finest Cherry Tomatoes
  • 1 Tbs Dried Oregano
