Sally's saucy sausage stew recipe

Pre-heat the oven to Gas 6, 200ºC, fan 190ºC.

Place the sausages on a lightly greased baking tray and put them in the hot oven until evenly browned.

Meanwhile, place a large, heavy-bottomed ovenproof pan on a medium heat with the olive oil. Add the onion and garlic to the pan and cook until softened.

Remove the browned sausages from the oven and lower the heat to Gas 4, 180ºC, fan 170ºC. Cut the sausages into decent-sized chunks then add them to the pan containing the softened onions, along with the sliced chorizo.  Add the peeled shallots, thyme, chopped tomatoes, red wine and stock. Bring to the boil and simmer for 5 minutes then transfer to the oven for a further 30 minutes.

If required, you can thicken the sauce with cornflour before serving.


This recipe can be adapted using different flavours of sausage and also using chillies for a spicier flavour.
