Taking part in The Orchard at Tesco‘s Fresh Fish promotion, I purchased some delicious responsibly sourced salmon fillets. This seemed an excellent way to make the most of them.

1. Preheat oven to 200C. Roll the puff pastry out into a long rectangle (a little over twice the width of your salmon fillets). Cut this lengthways into uneven halves. Take the smaller half and place on a greased baking tray and prick all over with a fork. Put in the oven for twenty minutes until it is slightly crispy. When it‘s ready, remove and leave to cool. The lower base of pastry is likely to puff up, despite your best pricking, but don‘t worry, it will collapse when you put ingredients on it.

2. While the base is baking: Drizzle lemon juice over the salmon fillets and set aside. Fry up the onions, garlic and mushrooms in the butter until soft. Add salt, pepper and dill if desired. Put them to one side to cool.

3. When the vegetables have cooled, stir in the cream cheese. Leaving a centimetre gap around the edges, spread this onto the cooled puff pastry base and place the salmon fillets on top in a line.

4. Brush some of the beaten egg onto the exposed edges of the puff pastry base and lay the uncooked half on top. Push this down around the edges, covering the lower half and sealing any gaps. Brush the remaining egg onto the top surface and cut a few slits.

5. Cook for 20-25 minutes in the oven until the pastry is puffed and golden brown. Ensure salmon is cooked before serving. While the salmon is in the oven, boil the sweet potatoes and mash. Boil the beans for a few minutes (to desired level) just before serving.

Notes: If you want to cook for more or fewer people, then simply adjust the number or size of salmon fillets and the length of puff pastry. If you don‘t have an egg then milk will be fine.

  • 10 Closed cup mushrooms (finely chopped)
  • 100g Cream cheese
  • Squeeze Lemon juice
  • Pinch Salt and Black Pepper (to taste)
  • Pinch Dill (optional)
  • 3 Cloves garlic (finely chopped)
  • 1 Egg (beaten)
  • 3 Sweet potatoes, peeled and chopped (as large as desired)
  • 240g Green beans (enough for 3)
