Chop the onions and mushrooms and sauté until lightly browned.
Add the sausage meat and grated carrot and simmer for 5 minutes. Bring a large pan of water to the boil, cook the pasta as per the pack instructions, once cooked drain and set aside.
Place the chopped tomatoes and herbs in an oven proof dish and add the tomato puree. Mix in the sausage mix and pasta stir well.
Top with grated cheese and grill until the cheese has melted. Serve immediately.
