I devised this recipe one weekend when friends rang to ask if they could come round and turned up with a bottle of champers to celebrate their good news and it was literally what I had in the freezer and fridge at that time!! I've been making them ever since!
Add all the ingredients except the prawns together and stir together. Fold in the prawns. Leave to chill. Lay the smoked salmon slices out and gently spoon the cheese mixture in the middle of the salmon. Bring the edges up to create a parcel. Tie the chives around the parcel to create a knot. Keep chilled ready to serve!
The longer you leave your mixture to chill the better your canapes will be! These can also be made larger for a starter, served with a nice crisp salad.
