Preheat the oven to 180ºC, fan 160ºC.
Cut the chicken into 2.5cm (1in) chunks and slice the chorizo thinly. Place into a large casserole dish.
Peel and slice the onions, wash and slice the peppers and slice the mushrooms. Add the vegetables to the dish along with the garlic, paprika, passata, sugar and stock.
Stir all ingredients together then place the casserole in the oven. Cook for 80 minutes, until the chicken is cooked and the sauce thickened a little.
Best served with mash potato and crusty bread.
