Grab a chopping board, your finest Elfe Potatoes, then pop a pan of water on the hob and whilst your waiting for it to come to a boil take your favourite knife:

Slice the finest Elfe Potatoes and place in the pan of boiling water for 10 minutes.

Once the pan of sliced finest Elfe Potatoes are simmering place your cod fish cakes in the oven for 18-20 minutes - or follow the timings provided. If these are frozen adjust the time accordingly (for homemade Fish Cakes see one of the many recipes on this site!)

Whilst the potatoes are simmering and the fish cakes are cooking head back to your chopping board and finely chop a red chilli, and slice up some mozerella - put this to one side for later.

Whip out your trusty frying pan and add a splash of oil. Bring the pan to a shimmering heat ready to add the potatoes.

After they have boiled for 10 minutes drain the potatoes and add them straight to the pan, reducing the heat to medium. Fry for a 2-3 minutes before adding the half the chilli (or pepper - see the hints and tips) Fry with the chilli for 2 minutes, then give each potato a flip over. Add the remaining chilli.

Fry again for 2 minutes then add Oregano at this point for extra seasoning. Fry for a final 2 minutes before adding a grind of sea salt to season.

By this point you should be about ready to serve your meal. Firstly, turn off the heat to the frying pan and the oven. Take the fish cakes out of the oven and put to one side to rest. Then layer the potatoes with the mozerella.

Once the mozerella is starting to melt (around a minute) dish the potatoes up on to your plates. Adding additional sea salt / cracked black pepper to taste.

Place the fish cakes on top of the potatoes in the center, slice the lemon in half, add to the plate and serve.

Hints & Tips: Leave the skins on for added flavour and slice them to the thickness of a pound coin - about 3 to 4mm. If you don‘t have a chilli to hand but you do have a red bell or sweet pointed pepper and some chilli powder you can try the following (works very well!) - dice half the pepper up and fry with a healthy sprinkle of chilli powder before adding the potatoes - the chilli will infuse into the pepper, adding that nice warmth you require from the chilli.
