Spinach, Goat's cheese plait recipe

This is a great recipe to serve cold – perfect for a summer picnic.

Pre-heat the oven to 200°C.

Heat the oil in a pan, add the crushed garlic and cook for one minute. Add red onions, leeks and mushrooms to pan, sauté until softened. Season with salt and pepper and add the mixed herbs. Remove the onions, mushrooms and leeks from the pan and leave to cool. Using the same pan wilt the spinach, pat dry and set to one side to cool.

Meanwhile roll the puff pastry into a rectangle approximately A4 size. Layer the cooked vegetables onto one side of the pastry as you will fold over half of the pastry over the filling. Next layer the spinach over the cooked vegetables, lastly crumble the goats cheese over the spinach.

Fold over the pastry to encase the filling. Seal each edge by brushing with beaten egg.  Brush the pastry with beaten egg and cook at 200°C for 15-20 minutes or until golden brown.

Slice and serve.
