Spirit raising risotto with tomatoes and bacon recipe

Chop the onion and garlic, and brown and soften with olive oil and butter in a large pan.
Fry the bacon to your taste.
Wash and de-stem the cherry tomatoes.
Prepare the vegetable stock and vino.
Add the rice to the onion and garlic then add small quantities of stock to the rice, stirring regularly. Slowly add the vino...
Add the tomatoes as early or as late as you like. They give a great kick to the sauce if you put them in early. They will become softer and more flavoursome. If you like them identifiable and with crunch, then add them in later.
Keep stirring and adding stock as the arborio rice softens and grows
Keep stirring with love for about 40mins until the stock and wine is absorbed and the rice is soft and tasty.
Check seasoning and add salt and pepper if required.
Serve with lashings of parmesan cheese and a large glass of wine

These ingredients serve more like 1 and a half people - great for leftovers!
