Super sausage supper recipe

Chop the veg and sausages to similar-sized pieces. Heat the oil in the pan and fry the sausage, onion, garlic and chilli (if using) until the sausage pieces start to brown on the outside.

Add the remaining veg and cook (continue stirring) until veg start to soften. Add the passata, tomato puree and herbs and leave to simmer until sauce thickens and veg are soft.

Add sweetener, salt and pepper to taste and simmer some more. Adding the sweetener brings out the flavour in the tomato sauce.

Serving suggestions

This can be served with pasta, a jacket potato or pitta and topped with grated Cheddar or mozarella for a great supper. If using low fat sausages it's a healthy option too!

  • 1tbsp olive oil
  • 3 cloves garlic
  • 1 red chilli, finely diced (optional)
  • 450g (1lb) Cumberland sausages
  • 500g (18oz) passata
  • 2tbsp tomato puree
  • handful Italian herbs (your choice)
  • 2tsp granulated sweetener
  • salt & pepper
