Christmas fast approaching, and in need of a good meal to get us ready to venture out onto the High Street for the annual Christmas shopping trip. Bacon Sandwiches always makes everybody feel good.

To make the ketchup, finely chop the tomatoes, onion and apple. Then mix all the ingredients in a saucepan. Bring to the boil, then reduce to the lowest heat. Simmer for two hours, checking regularly to see if it’s moist enough. If not, add some water.

Preheat the oven to 160C. Put the griddle pan on the highest heat on the stove. When it’s smoking hot, put on as many bacon rashers as possible. Let them fry on a very high heat for 3min, then turn them over.

They should be crispy and caramelised. Remove and keep warm in the oven. Toast the bread and butter it generously. Then turn the griddle pan back on and pop the slices in to absorb the juices.

Cook for about 30sec on each side. Remove. Spread the home-made ketchup on two pieces of the buttered toast. Layer three to four bits of bacon on the two slices and put the tops on. Serve hot.

You can make batches of the ketchup to freeze for future use.

  • 50 g Brown Sugar
  • 2 Cloves
  • 1/2 tsp Cinammon
  • 1/2 tsp Cayenne Pepper
