My sister in law made this one day and brought it around when we was having a bar-b-cue, it went down a storm. So much we had it at our wedding reception.

Cook rice as per instructions and allow to cool

Chop the onion up to small pieces

Drain peas and sweet corn in a bowl

Get a large bowl and place the rice, onion and sweet corn into one bowl and mix with salad cream should be enough so that the mixture is holding together by itself

Taste it is better to than it is take away. So add to your own taste, if you think it needs by taste more peas or sweet corn then put more in. When you taste nothing should be over powering the other.

What is great you can use light salad cream or frozen peas and sweet corn, it is what you prefer. This goes with as a side dish or part of a meal i.e. baked potato or bar-b-cue It is light and refreshing and simple.
