Victoria sponge recipe

This recipe is best for novice bakers and great for baking with kids as they can put everything in one bowl.

Mix all the ingredients in a bowl until combine (no need to mix individual ingredients) and put into two lined and greased 8inch sandwich tins. Bake for 25mins or until well risen. Leave to cool then sandwich with either jam or jam and cream.

To change it to either a lemon or orange cake just grate in half a rind of a lemon or orange. This recipe is perfect for cupcakes or fairy cakes. Cooking butter I find works best.
