preheat the oven to 170 celsius/ gas mark 3
Place cocoa powder in a bow and then mix in vanillia extract and boiling water to form a paste, set aside to cool slightly
in a 2nd bowl mix the bicarbonate of soda and flour
in a 3rd bowl beat sugar, olive oil and eggs together to form a pale yellow cream
add the cocoa mixture to the sugar, eggs and olive oil and mix. then add the flour.
mash the bananas and add to the mixture
place into muffin tins and bake for 25-30 mins until spongy
