A dairy free custard served with a warming spiced fruit compote.
First make the fruit compote. Place the dried fruit into a small pan with the cinnamon, star anise and apple juice and simmer for 5 minutes until the apple juice is syrupy. Remove from the heat and allow to cool.
To make the custard beat together the egg yolks, cornflour and honey in a small bowl until smooth. Pour the milk and vanilla extract into a saucepan and bring to a simmer, stirring occasionally.
Remove from the heat and pour over the egg mixture, whisking simultaneously. Pour the mixture back into the saucepan and cook over a low heat for 3-4 minutes until thickened, stirring all the time to make sure it doesn't catch on the bottom of the saucepan.
Spoon the compote into bowls and top with custard to serve.
