Preheat the oven to Gas 4/180°C/Fan 160°C
In a small bowl, mix the Stilton, apricots, garlic and wine together to make a paste.
Cut a pocket opening along the side of each chicken breast and stuff with the apricot mixture. Wrap the bacon rashers around the chicken breasts.
Place the chicken in a baking dish. Cover with foil and bake for 20 minutes. Uncover, and bake for a further 10 minutes, or until the bacon is crispy.
Slice the chicken and serve with green vegetables.
