We would always make these on Easter after we would have too many hard boiled eggs that we had dyed and 'found' in an Easter Egg hunt. They're a great party treat!
Hard boil eggs. Remove from heat and leave to cool.
When they are cool, cut each egg in half length wise and remove the cooked yolks and put them all into a bowl. Leave the cooked white parts aside.
Mix together the egg yolks, mayonnaise and mustard until smooth.
Mix in the celery and onion.
Put the yolk mixture back into the cooked egg white halves (should be heaped in mounds into the egg, so that you use all the egg yolk in all of the egg whites).
Sprinkle each egg with paprika.
The rest of the steps are easier if the eggs have been chilled in the refrigerator after they have been boiled, so this step can be done well in advance.
