Put a large pan of water on to boil.
Peel the ginger and garlic and grate finely.
Place a large, non-stick frying pan or wok on a medium/high heat and add the olive oil. Fry the diced onion in the oil until it begins to soften and colour a little. Once the onion has softened, add the chicken to the pan and fry until it is all sealed.
Add the vinegar and chilli to the pan and continue to cook on a medium heat until the chicken is almost cooked. Pour in the cola and bring to the boil; reduce the heat and simmer for 20 minutes.
While the sauce reduces, boil the rice according to the packet instructions then drain and serve together with the chicken.
Tip: You can crush garlic by putting a small amount of salt on the peeled clove and gently squashing it with a big knife onto the chopping board.
