I've always liked jelly fluff, and I wanted to make it into something really special. Hope you enjoy it!
Preparation Time 20 minutes, Chilling Time 30 minutes.
Break jelly into squares and put into a medium sized bowl. Microwave for around 10 seconds until jelly has almost liquefied. Remove and stir until there are no lumps left. Pour a little of the evaporated milk over the jelly and whisk with an electric whisk for a few seconds. Continue adding the rest of the milk and whisking until the mixture becomes light and fluffy. Divide the mixture between 4 serving glasses, and put in fridge for around 30 minutes.
Place the meringue nests onto a chopping board and, with a sharp knife, cut out a circle from the middle of each meringue, large enough to fit into the serving glasses. Place one on top of each of the jelly fluff bases, and reserve the remainder of the broken meringue for later.
Remove the stalks of the strawberries and discard. Cut strawberries into quarters lengthwise. Reserve half for finishing, and divide the rest between the glasses, placing on top of the meringue circles.
Put the milk into a bowl, add the Dream Topping and whisk until soft peaks form. Place a tablespoonful into each glass.
Divide the broken meringue between the glasses, and add the rest of the Dream Topping.
Squeeze some strawberry syrup onto the topping, add the remaining strawberries, and place the leaves on top. Serve immediately.
Prepare the strawberries, meringue and leaves (if you are making by hand rather than using ready-made decorations) while the jelly fluff base is setting in the fridge. Other fruits can be substituted, just use an appropriate flavoured jelly.
