Place the cashews and ground ginger or cinnamon in a food processor and blitz until the nuts resemble breadcrumbs.
Add the dried fruits to the food processor and process until the mixture resembles a paste. You may need to add a 2 tbsp water, so that the mixture combines and forms into a ball.
Line the base of a 900g (2lb) loaf tin with baking paper. Sprinkle 1 tbsp coconut or sesame seeds onto the base of the tin. Spread over the fruit and nut mixture. Sprinkle over the rest of the coconut.
Cover each ball with cling film and chill for an hour, then cut into 5 bars to serve.
These will keep for up to 3 days in the refrigerator.
Alternatively roll the mixture into balls, instead of serving in bars.
