Heat oven to 200°C/fan 180°C/gas 6. Put the potatoes on the bottom of a baking dish, lay the duck on top then scatter over the herbs. Pour the oil over the potatoes and duck, rubbing into the duck legs with your hands. Dot the butter all over the potatoes, add some pepper and plenty of sea salt then cook for 1 hour.
Remove the duck from the oven and allow to rest in a warm place. Give the potatoes a stir then return the potatoes to the oven for a further 30 minutes or until tender and golden. Drain off any excess fat then serve the potatoes with the duck and a big green salad. Serves 2 easily doubled.
