This is the ultimate comforting soup and is simple and cheap to prepare. It's eaten in Holland as a 'restorative', i.e. a hangover cure, on New Year's Day - and it is magical!
Gently sweat off the onions and carrots, add the bacon and fry gently for a few minutes.
Add the lentils, stock and seasoning and then simmer gently for 45 minutes. Place half of the soup in a blender and whiz up. Add this to the remaining soup and stir.
Serve with crusty bread.
