Very easy loaf cake, lovely with a cup of tea. This is another one of my family favourites.
Put the tea, sugar, mixed fruit and Quaker oat in a bowl. Cover and leave overnight.
Sift flour in a bowl. Add in beaten egg and then the tea and fruit mixture. Mix well.
Line a loaf tin with greaseproof paper. Pour in the fruit and flour mixture.
Bake in a preheated oven 180C/375F/ Gas 4 for 1 ½ hour till a skewer insert into the centre and come out clean.
Cool on a wire rack.
