I am always looking for ways to show that BBQ-ing does not require meats. Veggie BBQ is lovely.
Cut aubergines into slices 1/2-inch to 3/4-inch thick.
Combine 1/3 cup olive oil and 1 teaspoon minced garlic
Brush mixture all over slices and place directly on the bbq.
Cook until dark brown on both sides, about 10 minutes total, turning as needed
In the last few minutes of grilling, brush aubergine with a mixture of thick yogurt and fresh lemon juice
Garnish with some mint leaves
