My mum used to make these potatoes for me as a child and it was always one of my favourite things. I now make these for my children (and my partner) and they are loved equally by all. Comfort food at its finest!
Wash the potatoes and remove any eyes or sprouts etc, then stab all over
Bake in the oven for 1.5 - 2 hours (depending on the size of the potatoes)
Remove from oven and cut each potato in half. Scoop the flesh from each and put in a bowl. Add the grated cheese and salt and pepper to the bowl and thoroughly mix everything together.
Scoop the potato mixture back in to each skin then add a little grated cheese to the top of each one. Put under the grill for around 5 minutes until the cheese has melted.
Transfer each potato to the plates, add a little side salad and voila! Delicious chesty potatoes that'll never fail to impress.
I usually allow one jacket per person but you can give people as many as they would like. Just use more cheese.
