Easy Chicken Marengo

I found this recipe from a very old recipe book. I modified it over the years. It is still my family favourite recipe. It is tasty and simple to make.

Sprinkle the chicken joints with salt and pepper. Dredge with flour.

Heat the olive oil in a pan. Brown the chicken on both sides. Drain and set aside.

With the remaining oil the pan, sweat the shallots and garlic. Add in sliced mushroom, herbs, tomatoes.

Return the chicken joints into the pan. Add in tomato soup, wine and Knorr chicken stock pot. Bring to the boil. Cover and simmer very gently for 1 hour till the chicken is tender. Season to taste.

Serve hot with slices of garlic croute bread. Garnished with chopped herbs.

If you have no fresh herbs, you can use dried mixed herbs instead

  • 2 fresh tomatoes
  • 1 onion (chopped)
  • 150 mls French white wine
  • 100g slices mushrooms
  • 3 tablespoon Olive oil
  • 1 handful chopped herbs
  • 2 tablespoon Plain flour
  • 1 clove chopped garlic
