Pre-heat oven to 180. Cut the fillet off from the underside of the chicken breast.
Cut a slit in the chicken, not all the way through, down the centre of the breast.
Put your knife flat and carefully cut a pocket into either side of the central slit.
Cut up your chosen butter and place this inside the pocket.
Place the chicken fillet into the pocket and pull the sides up to cover.
Place into a lidded baking container and drizzle with Olive Oil. Cook for about 30 mins or until chicken is nearly cooked through. Baste during cooking.
About 10 mins before the end of cooking sprinkle with Tesco Dairy Ingredients cheesy topping and place under the grill to crisp up.
Serve with new potatoes and a crisp green salad - yum!
Use a sharp knife and mind those fingers. If you do cut a hole in the breast fill it with a bit if the fillet.
