Pre-heat the oven to Gas 4, 180ºC, fan 160ºC.

Put a pan of water on to boil for the pasta; once boiling, cook the pasta for the time shown on the packet instructions minus 2 minutes.

Put the milk, butter and flour in a sauce pan. Place over a low heat and stir constantly using a whisk. Stir until the sauce has thickened and is bubbling then add the pepper and nutmeg. Turn heat down to simmer for 5 minutes.

Use the crusts off a loaf of bread and blend with hand blender to make bread crumbs. Wholemeal or seeded breads are good.

Give the sauce a good stir and add the grated cheese, leaving out a good handful for the topping. Next add the diced chorizo to the cheese sauce.

Drain your pasta and place in a large oven dish. Pour over the cheese sauce and mix to combine.

Finally, sprinkle the bread crumbs over the top, followed by the rest of the grated cheese. Place in the oven for 10 to 15 minutes or until cheese is bubbling.

Tip

This dish is extremely versatile.  You could use diced pre-cooked bacon, leftover cubed gammon, diced cooked chicken, or pre-boiled vegetables, e.g. cauliflower.
