Place the flour, butter and salt into a food processor.
Blitz until they have combined into a breadcrumb-like consistency.
Add the water and continue to blitz. Add more cold water, if needed, until the pastry has formed a smooth ball.
Wrap the pastry in clingfilm and place in the fridge for 30 minutes.
Whilst the pastry is chilling, finely dice the carrot, celery, potato, spring onions, onion and parsnip.
Place the diced vegetables in a bowl with the minced beef. Stir well.
Mix the gravy granules with some boiling water to make a thick gravy, add this to the meat and vegetable mix and stir well.
After 30 minutes, take the pastry out of the fridge and roll out to a thin sheet.
Using a small plate as a guide (or by eye if you prefer) cut the pastry into circles.
Spoon the meat and veg mixture into the centre of the pastry circles.
Brush a little water around the edge of the pastry circles and fold over to seal the mixture in the pastry.
Crimp the edges and place on a baking tray.
Preheat the oven to 200°C.
Brush the pasties with the beaten egg and place in the oven for 20 minutes.
After 20 minutes, turn the oven down to 160° and continue to cook for another 30 minutes.
Take out of the oven and eat as soon as possible!
