Easy Peasy Blueberry Cheesecake Pie

I am a huge fan of blueberries and love them raw but I wanted a simple recipe that I could use when guests came for dinner. This recipe is based on a few I found online but I adapted them to my own tastes - not least the addition of the Tesco Pastry Case. This makes this delicious dish even quicker to make and foolproof too!

Measure 50g of Blueberries and put them to one side. Put the remaining 200g of Blueberries, 30g Sugar and 30ml of water into a saucepan. Heat until the mixture bubbles, then reduce heat and simmer until slightly mushy (approximately 5 minutes). Remove from the heat.

Mix the double cream and cornflour together to make a paste. Add this to the blueberry mixture and stir until completely mixed. Pour this mixture into a bowl and cool in the fridge for 30 minutes.

Beat the cream cheese and 30g of sugar together. Spread it evenly over the bottom of the pastry case.

Remove the blueberry mixture from the fridge and spread over the cream cheese mixture evenly. Sprinkle with the remaining blueberries saved in step 1.

Cool for approximately 1 hour, or until ready to use. Cut into 6 slices and serve.

Bask in the compliments from your guests!

This dessert can be made 24 hours in advance if stored in the fridge. For extra decadence, drizzle some double cream over the top just before serving.
