Easy peasy fish cakes recipe

In a bowl, mix the onion, tuna and potato then using floured hands, shape into 8 cakes.

Lightly dust with flour and dip into eggs and then breadcrumbs. Chill for 30 minutes.

Heat 1cm Crisp 'n Dry cooking oil in a frying pan on a high heat.

Fry the fish cakes in batches for 3 minutes on both sides and drain onto paper.

Make your own mash: Peel and halve 400g potatoes. Place in pan and cover in boiling water. Boil rapidly for 15 minutes, or until soft. Drain and mash with some salt and pepper and 50ml milk to a smooth consistency.

To bake the fish cakes: You can also bake these fish cakes. Simply drizzle with Crisp 'n Dry, place onto a baking tray and cook for 20 minutes at 200 C / Gas 6.
