A handed down family recipe that‘s quick and easy to make and always goes down well!
Preheat the over to 150.
Beat the 4 eggs until fluffy.
Add the whipping cream, sugar and the juice and rind of the lemons and lime continuing to whisk until a smooth mixture - it should only take a couple of minutes.
Pour the mixture into the ready made pie crust taking care not to overfill as the pie does tend to rise slightly when baking.
Bake for 30 mins, turn off oven and leave for a further 20 mins.
Put on a rack to cool before refrigerating.
Will keep for 3 days and freezes very well.
Serve and enjoy!
