Toast the muffins lightly in a toaster or under the grill. Carefully split the muffins. Place a tablespoon of the tomato passata or purée on each muffin half and spread it so the top is covered.
Top the tomato base with grated cheese and, finally, a sprinkle of mixed herbs.
Place on a baking sheet under a hot grill until the cheese is bubbling and golden. Or place in a preheated oven, Gas 3, 170°C or fan 150°C for 10 minutes.
