Peel potatoes and put them onto boil.

In a seperate pan, place 4 eggs in water, bring to boil, and hard boil.

Grate all the cheese, keeping about ¼ to one side.

When potatoes are cooked thoroughly, mash them with a large slosh of milk, all the butter, and about 3/4 of the grated cheese.

Make sure the mash mixture is really well mixed and place approximately half into a deep oven proof dish. You dont want to be too skimpy so best to be deep rather that spread it too thin!

Peel the hard boiled eggs and place them into the mash mix. Spoon the rest of the mash mix into the dish, covering the eggs. Sprinkle the rest of the cheese over the top of the mash mix.

Since all ingredients are already cooked, the dish now just needs to be placed either in an oven or under a grill. You want the cheese on top to melt. If you leave it for longer the cheese will go brown and crispy - that's the way I like it!

Tip

This dish can be stretched further simply by adding more eggs and potatoes!

It is a great heart warming and comforting dish - it doesn't need anything else, but you can add baked beans or peas if you like.

It isn't an elegant meal, but when you need comforting you dont want elegance - you want to be warmed and indulged and sometimes chocolate isnt the answer!
