Bring a large pan of salted water to the boil and cook the rice according to packet instructions.
When cooked, drain and set aside to keep warm.
Dice the bacon and fry in 1 tsp oil. When nearly cooked, add the chopped onion.
Add the eggs and rice to the frying pan and stir quickly to ensure the egg is worked through all the mixture.
Serve once the egg is cooked through.
