Slice each muffin in half to make the pizza bases.
Grill the muffin pizza bases, cut side down until they are warm and just browning.
Mix the tomato puree with 2tbsp water in a bowl and spread onto muffin pizza bases.
Scoop the soft cheese into another bowl, mix until smooth then spread onto muffin bases on top of puree.
Grill until edges of muffins are brown; the cheese will not melt much, but the pizzas should be piping hot.
Prepare the cheese and the tomato puree before grilling the muffins, serve when cheese is melted.
