Preheat the oven to 180° C.
First rinse the Enoki mushrooms, next pat them dry with kitchen paper. Cut off base of mushrooms, place on a baking tray in the preheated oven until cooked, around 15mins.
Whilst this is cooking, prepare your salad. Open your free mixed salad, mix in the sliced cucumber. Add the sliced red sweet pepper, the sliced sausage and drizzle the honey mustard dressing over, and toss.
Add the black pepper croutons and the feta cheese cubes and toss. Arrange on a dish, and serve.
You can change any of the items in the salad or add more things it its very flexible. The Enoki mushrooms give it a meaty edge.
