Heat a saucepan over medium heat. Add the oil and diced shallots. Add a pinch of salt and fry the shallots gently until translucent and soft.
Add the garlic and cook for another couple of minutes.
Add the tomatoes to the pan, followed by the frozen mince. Stir well.
Pour in the stock, bring to a simmer and cook for 30 minutes or until the sauce is thick and rich. Season to taste.
While the sauce is cooking, cook the pasta according to the instructions on the pack. Drain and add to the sauce, then mix well.
