Preheat oven to 180°C/350°F/Gas 4.
Place the potatoes in a pan of boiling water. Whilst the potatoes are boiling, mix together the meat ingredients with sea salt and black pepper. Once the potatoes are cooked, drain well and mash together, once cool, add to the meat along with 2 eggs, the parmesan cheese, chopped onion and mixed herbs.
Using your hands, make the mixture into small balls and roll them in the breadcrumbs until they are completely covered. Place on a greased baking tray and drizzle a little olive oil on each meatball. Place them in the oven for 30 minutes; grill them for 5 minutes if you want to make them crispier.
Serve with a green salad and crusty bread.
