Preheat the oven to Gas 1, 140°C, fan 120°C.
Put the chicken, peppers and onion in a bowl with the oil and fajita mix. Stir well and set aside.
Preheat a heavy-based frying pan or griddle over medium-to-high heat for 5 minutes. Warm the tortillas in the oven according to the packet instructions.
Increase the heat under the pan to high and when it's very hot and begins to smoke carefully add the chicken and vegetable mixture. Cook stirring for 8-10 minutes until the chicken is cooked through.
Take straight to the table in the pan garnished with coriander and lime wedges. Serve with the warm tortillas, sour cream, salsa, guacamole and grated cheese.
Serve this dish as soon as it's cooked so that the chicken and vegetables are sizzling when you take it to the table. Let everyone help themselves to the tortillas and toppings.
