Grate the courgettes and carrots into a large mixing bowl, then finely chop the red onion and add to the bowl. Add the mince, oregano and oats. Beat the egg and add to the mixture.
Mix all of the ingredients for about 5 minutes, so that all the ingredients are combined. The mixture should be a little sticky and bind together easily.
Make 16 meatball, by moulding the mixture in your hands, if you would like burgers, slightly flatten them.
Place on a non stick oven tray and cook for 25 minutes in a pre-heated oven at 180°C.
Serve immediately with a mixture of vegetables and rice or pasta.
It is easier to mix with your hands (after washing them).
