Heat the oil in a large frying pan. Fry the sausages till light brown. Lift sausages off the pan and drain. Cut into slices.
In the same pan, fry onion and the rest of the vegetables for 1 minute. Leave to cool.
In a large bowl beat the eggs and milk together. Season with salt and pepper.
Roll out the pastry and line a 23cm. Diameter flan dish. Spread the sliced sausages at the base and then the vegetables.
Pour in the egg and milk mixture. Sprinkle the top with grated cheese. Put the flan in a pre-heated oven Gas mark 6 (200C or 400F) and bake for 30 minutes until golden brown and set.
