Fast fish florentine recipe

Slice the tomatoes and spread over the base and up the sides of an oven proof dish

Wash the spinach and put on top of the tomatoes.

Place the fish fillets on the top

Bake at 200 degrees c for around 25 minutes or until the fish is cooked.

If you are really pushed for time you can microwave this on high for a few minutes until the fish is cooked. Fill the dish with as much spinach as you can as it will shrink when cooked. You can use haddock, cod or salmon for this recipe
