Fattoush salad recipe

I lived and worked in Kuwait for five years, this was my favourite salad with Chicken Shawarma kebabs

Tear the washed lettuce into evenly sized pieces

Cut each tomato into 6 or 8 wedges

Cut the cucumber into 2cm cubes

Finely shred the red onion into rings

Toss all the salad items together into a salad bowl, chill in the fridge until required.

Cut the Pittas into 3cm squares and fry in a little veg oil until crisp and golden. Drain on kitchen paper.

Mix the lemon juice, olive oil, oregano and soumak powder together to make the dressing, season with salt and black pepper. Pour the dressing all over the salad, toss well, add the pitta pices and mix. Serve immediately

  • 1/4 Cos or Roumaine Lettuce
  • 2 large Vine Tomatoes
  • 1/4 of a fresh cucumber
  • 1 medium red onion
  • 30mls Extra Virgin Olive Oil
  • large pinch Soumak Powder
  • large pinch dried oregano
  • 2 large White Pitta breads
  • a little Vegetable oil to fry the pittas
  • Pinch Salt and black pepper
  • The juice from 1/2 of an unwaxed lemon
