The day before, combine the cream cheese, grated, mature Cheddar cheese, red onion, chutney, chopped garlic and Worcestershire sauce in a medium-sized mixing bowl. Mix together until blended and smooth. Cover the bowl in cling film and refrigerate overnight.
The following morning, chop the cranberries, organic walnuts and chopped flat leaf parsley on a large board and mix evenly. You can use a food processor if you prefer.
Remove the chilled cheese mixture from fridge and form into a ball or log. Roll the cheese in the fruit and nut mixture until evenly coated to your liking. Wrap finished ball/log in cling film and refrigerate until ready to serve.
Accompany your cheese ball with Scottish oatcakes, crackers and flat breads.
Tips: I alternate cream cheese flavours, as well as switching the dried berries and nuts to go with the seasons and special occasions. I use Scottish vintage cheddars while in Scotland and a nice Canadian mature cheddar when in my native Canada.
The festive recipe above is perfect for Christmas and Hogmanay gatherings and is a huge hit in our families here and in Canada. The picture I've included is from my niece Rebecca's 18th birthday, when the plate cleared in the first five minutes of the buffet opening.
I recommend doubling the recipe for gatherings of more than 8.
