Looking for healthy meals for my toddler that we can eat as a family. We are currently trying to increase our fish and veg intake.
Melt butter in pan, add leeks and sauté for a couple of minutes. Add the carrots, cover with water and cook for 10 minutes. Add the broccoli and cook for a further 5 minutes. Stir in peas and simmer for a further 5 minutes or until veg is tender.
Meanwhile put the milk and peppercorns in a pan and add the fish. Simmer until fish is cooked. Put to one side, remove peppercorns but reserve the milk.
Melt butter in pan and stir in flour. Gradually whisk in the milk from earlier and bring to the boil. Once sauce has thickened, stir in the cheese.
Drain vegetables, flake the fish and mix. Pour over sauce and stir in.
Suitable for weaning babies.
