Mix the mustard, ground coriander, garlic, soy sauce, sugar and sesame oil together in a bowl. Add the sea bass fillets to the sauce.
Put the sea bass under the grill and cook for 5 minutes on each side. Heat the rest of the sauce in a pan. Pour the cooked sauce over the sea bass and garnish with chilli and coriander leaves.
Serve with savoury rice or salad.
