Put a large pan of salted water on to boil. While waiting, finely chop the onion and saute gently in some olive oil in a frying pan. When soft, add the diced bacon. You can also add some chopped garlic at this stage if you like it. When the pan of water is boiling, add the pasta and cook until soft (about 9-11 mins). Drain the pasta and add the cooked onion and bacon. Whisk the eggs and add to the pan on a very low heat - be careful of burning! Stir this all the time until the eggs are barely cooked. Then season well with some black pepper and serve into 2 bowls. Add some grated parmesan on top if liked. Delicious!

Be very careful so as not to burn or overcook the egg. It will continue cooking for a short while when taken off the heat. You can also add some shopped fresh basil or parsley to this dish. The Finest pasta is ideal with this as the egg will cling to its surface. Lovely with some garlic bread!
