Cut the larger potatoes in half and season in the pan.

Fill the pan of potatoes with hot water and simmer for 20mins

When slightly firm on the outside and soft in the middle drain the water and leave to cool for 5minutes

Add the salad cream and mayo and finish with the pepper on the top

Don't over boil the potatoes, 20mins is plenty of time for the perfect potato
